Winners and Losers: A Closer Look at Michelin's 2010 Picks

We’ve now had a chance to take a deep breath and comb through the new Michelin list. First, the two notable downgrades (and there weren’t many this year): Adour and Del Posto both go from two stars to one. Cru and Allen & Delancey dropped off the list after their chef departures, and so did JoJo. Meanwhile, A Voce has snagged its first star under new chef Missy Robbins — its former chef Andrew Carmellini’s new spot, Locanda Verde, fails to rank. Michael White is suddenly in possession of four stars as Alto is upgraded to two, Marea debuts with one, and Convivio gets its first. Other notable one-star debuts: Eleven Madison Park gets one, but only one versus the three four it got from Bruni. Minetta Tavern will also have to settle for a lone star. Sushi Yasuda again fails to snag a star and is passed over for Japanese spots Soto, Sushi Azabu, and Kajitsu. Tourist and special-event destination River Café gets some respectability via a star. Newcomer SHO Shaun Hergatt, recently praised by Platt gets one. And perhaps the most unexpected picks: Persian restaurant Shalizar and Thai standby Rhong-Tiamget nods.

Michelin Picks Are In: Daniel Upgraded to Three

Michelin results are in, folks. We’ll dissect the selections later, but for now, here’s this year’s list. Of note, right off the bat: After its redesign, Daniel has been upgraded from two stars to three (Alan Richman had worried it wouldn't be). A good day for Chef Boulud.

Three Michelin stars mean exceptional cuisine, worth a special journey. One always eats extremely well, sometimes superbly. Distinctive dishes are precisely executed, using superlative ingredients.

Empire State Building lit for China, drawing ire

NEW YORK – Red and yellow lights shone from the top of the Empire State Building at dusk Wednesday, a tribute to communist China's 60th anniversary that protesters labeled "blatant approval" of totalitarianism and criticized as inappropriate for an icon in the land of the free.

The building is routinely lit with different colors to mark holidays and big events, but opponents questioned whether it's right to commemorate a sensitive political issue, particularly when China has such a poor human rights record.

About 20 supporters of Tibet, which China has ruled since shortly after communists took over in 1949, protested outside the building during a ceremonial lighting of a scale model inside the lobby. They chanted "No to China's empire; free Tibet now," and held signs reading, "Empire State Building celebrating 60 years of China's oppression."

Lhadon Tethong, executive director of Students for a Free Tibet, called the lighting "outright, blatant approval for a communist totalitarian system."

"It's a great public relations coup for the Chinese state," Tethong said as tourists gawked at the protesters. "But on the other hand, it's sure to backfire because the American public and the global public will speak against it."

At the lobby ceremony, building manager Joseph Bellina called the lights a high honor and said he was proud of the relationship between "our countries and our people."

Chinese Consul General Peng Keyu, who pulled the switch on the glass-encased model, said he was "honored and delighted."

He said China's reforms of the past 30 years have led to greater openness and "tremendous change."

Keyu and Bellina didn't address critics and declined to answer questions.

Journalist and blogger Marc Masferrer questioned legitimizing a government that continues to repress its citizens' freedoms, including their access to media and the Internet.

"I don't think one of our great landmarks should be turned into a platform to honor a regime and a system responsible for as much tragedy and all the other things that come with a repressive system," he told The Associated Press.

Masferrer pointed out that this year is also the 20th anniversary of the violently crushed student-led movement in Beijing's Tiananmen Square. The People's Liberation Army is believed to have killed hundreds, possibly thousands, of protesters.

Politicians united in their disdain.

Rep. Anthony Weiner, a New York Democrat, said the lights should not be used to pay tribute to what he called "an oppressive regime" with a "shameful history on human rights."

Rep. Peter King, a New York Republican, said it was "a sad day for New York."

"I am strongly opposed to it or any commemoration of the Communist Chinese revolution. It's one thing to acknowledge the government; it's totally immoral to honor it."

The lights atop the building, which is owned by W&H Properties, are often are changed. For example, Italian colors — red, white and green — commemorate Columbus Day, while green, white and orange are displayed for the India Day parade.

For the Chinese anniversary, the lights were to remain on through early Thursday.

DecadesTwo Pop-up Returns to Soho Tomorrow

Los Angeles designer consignment shop DecadesTwo is back in New York with a fall pop-up at Kiki de Montparnasse this weekend. Building on the success of the first shop back in May, this season DecadesTwo co-owners Christos Garkinos (who made a cameo on last week's Rachel Zoe Project) and Cameron Silver are bringing an expanded stash, including menswear, outerwear, and five times as many pairs of shoes (from designers like Christian Louboutin, Alexander McQueen, Marc Jacobs, and Jimmy Choo). Highlights include a flapper-inspired sequined Lanvin dress, a coral Chanel quilted handbag, and Louis Vuitton sneakers from the Stephen Sprouse collection. The pop-up is open to the public for three days — following a private sale on Thursday — so stop by this weekend to sort through the gorgeous designer wares (or if you're like us, to browse enviously). ZagatDay '09: SF Edition Released; Gary Danko Back on Top

2009_09_zagat2010.jpgThe 2010 Bay Area edition of the annual Zagat Survey was released this morning, complete with the seemingly-arbitrary numbers that everyone has come to know and love. After getting the boot from the top spot last year for the first time in six years, Gary Danko reclaimed the Top Food Rating mantle from the French Laundry, though both restaurants (and Cyrus) garnered near-perfect scores of 29.

For what it's worth, a full breakdown of the top 20 restaurants in the Top Food Rating Overall and Most Popular—complete with color-coordinated rising/falling stats!—follows the jump (Digression: Michael Mina more popular than Delfina? Oh really?). The actual press release highlights the usual trend stats (people dining out less, average meal cost, etc.) quite well, and in terms of key newcomers, the highest rated were the following: Bottega (25), Zinnia, La Mar, Marzano and Nopalito (all 23).

The Twenty Biggest Chef Empires

The business of being a chef has expanded enormously in the last 25 years. Once upon a time, it was considered a working-class trade. Now Gordon Ramsay has 27 restaurants and five TV shows. Alain Ducasse has authored eighteen cookbooks; Nobu Matsuhisa has five. Batali acts, Colicchio sells Diet Coke and fly-fishes for AmEx, Charlie Palmer hawks home décor in Sonoma. But which chef has his hand in the most pots around the globe?

To decide, we narrowed the field to men and women who operate restaurants in the U.S. and then compiled a list of all their traditional food projects (restaurants, cookbooks), self-promotional activities (TV shows), and offbeat activities (recipes for online-dating sites, flavor sprays). Since we consider operating restaurants to be more important to a chef's empire than his ancillary product deals, we assigned each of these activities a point value and weighed them according to significance. Restaurants got four points; leading TV roles, three; cookbooks, two; and everything else counted as a single point. The top twenty high-scorers are listed below with highlights from their careers. Actual totals appear in the first four columns, while the overall score according to point value is tallied at the end.

Overextension has its limits: To stave off bankruptcy this summer, he cut costs by slashing staff by 15 percent and rescinding ownership of hotel restaurants in L.A. and Paris.

The CEO Dream Team - Walton, Schwab, Marcus And Blank

Good ideas are a dime a dozen. The magic that turns a person's vision into a profitable enterprise lies in the execution of those ideas. The great entrepreneurs, the ones that took their vision and built exceptional businesses from the bottom up, needed managerial skills and financial acumen – not just creativity and imagination.

Sam Walton
By 1950, the fates had seemingly stymied Sam Walton's attempts at building a retailing empire. His turnaround operation at a Ben Franklin store in Arkansas was lost over a lease. The landlord, seeing that Walton had turned the store into the leading one in the region by consistently pricing lower than nearby competition, refused to renew so he could give the store to his own son.

Walton moved to a new location and insisted on a 99-year lease this time. He continued to consistently beat his competitor's price and was soon running 16 variety stores, but Walton saw trouble on the horizon. Large discount stores like Kmart were emerging to push out small-scale variety stores. After unsuccessfully pleading with Ben Franklin to change their strategy and open large discount outlets, Walton decided to go it alone. Walton knew he couldn't go head to head with the larger stores because he had less capital to work with. Instead, he focused on rural locations that his bigger competitors ignored in favor of dense population centers. The rural focus posed challenges in both warehousing and shipping, so Walton built huge warehouses in areas between several stores.

Walton's shipments to the warehouse were much larger than they would have been to any single store, allowing him to save on shipping costs through volume discounts from suppliers. From the warehouse, the newly-christened Wal-Mart stores kept a constant inventory flow, reducing storage costs and keeping an accurate tally of demand via new electronic scanners. The stores then passed these cost savings on to customers, making a very small profit on each sale but making up for it with a huge volume of sales.

Walton took the company public in 1970, and was ready to go head to head with other discounters in larger cities. Wal-Marts weren't opened in the expensive malls or leasing areas of city centers, but on the outskirts where land could either be purchased outright or leased affordably. Then, Walton depended on his consistently low prices to attract customers to his store. Cost consciousness, a commitment to increasing efficiency and the ability to negotiate volume discounts with suppliers gave Wal-Mart a pricing edge that few retailers have yet to match.

Charles Schwab
In much the same way as Sam Walton started off in the sticks of retailing, Charles Schwab made his name in a largely ignored segment of investing – the individual investor. Using money borrowed from relatives, Schwab was running a small brokerage firm, Charles Schwab & Co. These were lean years for small firms that couldn't land institutional clients willing to part with large fees. It all changed on May Day, however, when the SEC moved away from fixed-rate commissions. While most brokerages lowered fees to lure in more institutional clients, they were either maintaining or increasing the pound of flesh they took from small investors. Charles Schwab & Co. began offering discount brokerage services to any investor who wanted to buy or sell a stock. Schwab changed the structure of his company to streamline costs to justify the discounted rate. Gone were the research, advice and bonuses. In their place was a salaried staff executing orders via an automated computer system.

Again, the volume of orders made up for the lower profit realized on each fee. Schwab used the profits to make his brokerage more attractive to individual investors with 24-hour service, cash management accounts, insurance, more branch offices and a commitment to educating potential investors until they felt confident in investing for themselves. Schwab's vision was much larger than his available capital, so he sold his company to the Bank of America, in hopes of reaching individual investors everywhere.

Unfortunately, Schwab found Bank of America too cost-heavy, and he bought his own company back in 1987 – it turned out to be one of the most successful LBOs of the era. In 1990, Schwab embraced emerging technology once again to become a leader in internet trading. Schwab democratized investing, making it as easy and affordable for individual investors to make and lose money in the market as it is for the large institutions. Bernie Marcus and Arthur Blank
The rise of Bernie Marcus and Arthur Blank offers a synthesis of what made Walton and Schwab successful entrepreneurs. Marcus and Blank were part of the management at Handy Dan, a hardware retailer. In the 1970s, the two began applying discounting principles at their outlets, noticing the same increase in overall profits on which Walton built Wal-Mart.

Unfortunately, Marcus and Blank abruptly found themselves out of a job when a raider bought up their parent company and fired the management. Raising cash from investors, Marcus and Blank decided to start their own hardware chain. They wanted to combine discounting on a wide array of products with superior customer service. Their niche, as they saw it, was in supplying their customers with both the supplies and the knowledge needed to carry out home improvements by themselves.

Although the low prices were important, it was the staff that turned out to be the clincher for most customers hesitant about the move from calling professionals to do-it-yourself. Home Depot held educational sessions about every aspect of home improvement. Soon, terms like "tongue-in-groove," "caulking" and "plumbing trap" were no longer the exclusive vocabulary of professionals.

Home Depot kept on the leading edge of consumer education, publishing guide after guide and making, "You Can Do It. We Can Help" the company mantra. Loyal repeat customers provided a solid base for Home Depot to expand rapidly, going public in 1981. It became the world's largest hardware retailer and used its position at the top to pass on lower prices to its customers. Marcus and Blank are no longer involved in the day-to-day management, but the corporate culture they created has kept Home Depot at the top of a very competitive industry.

Conclusion: Working For The Customer
The tie that binds these three stories is the idea of working for the customer. Walton, Schwab, and Marcus and Blank were successful because they were constantly looking for ways to attract and retain customers. This manifested in diverse ways (cost-conscious strategies, negotiating with distributors, commitments to client education), but the same principle was at the heart. Although strong management skills and vision are important, it's the relentless drive to bring the customer what they want at the best price that helped these entrepreneurs and their firms succeed. This same drive has powered the careers of entrepreneurs from Henry Ford to Michael Dell. Sam Walton said it best, "There is only one boss: the customer. Aisle by Aisle: Buying Healthy Bread

Take a walk down the bread aisle at your market and see how long it takes to find a loaf without high-fructose corn syrup. It took me 30 minutes the first time I tried! Many packaged bread loaves have added ingredients that aren’t so healthy, even though their labels sport fancy words like “multigrain” and “unbleached flour.” Follow these tips to make sure you get the healthiest.

Nutrition Basics
Store-bought breads provide tons of B-vitamins and selenium and have around 80 to 110 calories per slice. Basic bread (without sugary glazes or lots of add-ins) is also low in fat with no cholesterol. The fiber content depends on the type and variety of bread you choose.

Whole Grain vs. Refined
All grains are made of three parts: the large endosperm (where protein and carbs are found), the germ (which contains fat and some B-vitamins) and the bran (outer layer with fiber and vitamins). When bread is “whole grain,” it means the entire grain is left in tact. When it’s “refined” or “milled,” the bran is removed, as is some of the germ. This is why white bread contains no fiber — it has no bran in it. Whole wheat and whole rye are some common whole-grain breads, but reading the label is key to making sure you’re getting the real deal.

Read the Label
If you buy the right bread, it’s an easy way to get some healthy whole grains, but don’t be fooled by fancy words on food labels. Make sure the first ingredient listed has the word “whole” — like whole rye, whole wheat or whole cornmeal. Be wary of product that say “made with whole grains,” “made with whole wheat” or even “multigrain” — this means only a small percent of the bread contains whole grains (not enough for any significant health benefits). Don’t be dupped by packaging that says “contains wheat flour” or “contains unbleached flour” — that doesn’t mean it’s whole grain either.

Hidden Ingredients
Finding bread without high-fructose corn syrup listed in the top 4 ingredients is tough. Finding bread completely free of the sweetener can be even more challenging. Sometimes you may also see cheese added to the mix. Read the ingredients carefully, especially if you have a dairy allergy.

Here’s a rundown of some common breads you can find:

  • Whole Wheat: Look for the words “100% whole wheat” on the package, and the ingredients should list “whole-wheat flour” as the first ingredient.
  • Multigrain: As the name implies, it’s made from many grains — this doesn’t mean that they’re whole grains. Even if the package says that it contains wheat — it may only make up 2 or 3% of the bread. If the label lists “enriched wheat flour” as the first grain, it’s not the real deal.
  • Brown Bread: Just because it’s brown doesn’t mean it’s healthier. Many companies add food coloring or molasses to create that brown color. Check the ingredients for the word “whole,” especially for brown breads like pumpernickel.
  • Potato Bread: This isn’t a good choice if you’re looking to up your fiber — it barely has any. Plus, potato flour is usually the fifth or so ingredient (”enriched wheat flour” is typically the first ingredient and there’s often dairy in there). Calories range from around 80 to 100 per slice, so watch your portions, too.

What To Choose
Aim for 110 calories or less per slice and at least 3 grams of fiber. If you have the time, bake your own — you can freeze extras for later. But so you don’t have to stand in the bread aisle for hours, here are some packaged breads we like:

JPMorgan CEO Jamie Dimon has been chafing under the Troubled Asset Relief Program. It's almost like the $25 billion injection the government gave JP Morgan has given him an actual rash, and the only thing that will relieve the burning and stinging and itching is if the government just takes back the money and lets him cleanse his house of the whole putrid affair. Until then, all he can do is scratch. Which is what he did earlier this week when he read aloud from a mock letter to Treasury Secretary Tim Geithner at a conference at NYU: “Dear Timmy, we are happy to be able to pay back the $25 billion you lent us,” he said. “We hope you enjoyed the experience as much as we did. Love, Jamie." It's not the first time Dimon has publicly taken a dig at the TARP and the other rules the administration has put on financial institutions.

For instance:

• There was the time when, at the White House, he handed Geithner an Ed McMahon–style fake check for $25 billion. That was fun!

• So was the time he called the TARP “a scarlet letter” and “the TARP baby.”

• But jokes aside, he was salty about all of the "vilification" of bankers. “I would ask a lot of our folks in government to stop doing it because I think it’s hurting our country.”

• Participating in TARP "became a little more of a painful experience" than he'd expected initially, he told shareholders a couple of weeks ago, because some people in the federal government are slippery bastards. The program had kind of "'morphed into something different' since the bank first received the funds," he said.

• Furthermore, the administration's new rules against hiring foreigners are a "complete and utter disgrace."

• Overall, "We learned our lesson" about borrowing from government, he said.

• And they're about sick of the government's shit. “We believe we’ve met all the terms to get out of TARP,” he said on a conference call Monday. “If we don’t get out of TARP, we’d be very surprised. We don’t think we should be surprised.

Breaking Views is concerned: They suggest Dimon might want to zip his (full, pillowy-soft) lip lest he lose his favored status with the administration. We totally disagree; everyone knows that to get what you want you have to badger, and we think next time he has the opportunity Dimon should probably publicly headlock Tim Geithner and give him the noogie he so richly deserves. Do it for America, Jamie. Do it for the world.

Dan Zhou's Highlights from yesterday's ISI - CEBM China Research

 
"*October PMI showed an extensive slowdown in China's manufacturing sectors. This is consistent with recent news reports regarding production cuts and factory closures. The CFLP China MFG PMI dropped significantly to 44.6%, with the new export orders index at 41.4%. The employment index fell to 47.0%, the lowest level since the start of the series. Only the healthcare sector saw improvements, while the employment index in other sectors stood at or below 50%. This confirms the continued weakening of China's manufacturing sector. Exports and retails sales were among the positive spots the past several months. However, with the US recession and the deterioration in domestic employment, these areas will likely weaken in 4Q. The drop in economic activity suggests that China is now on the verge of a hard landing. This suggests the government will have to act more aggressively to avoid this fate."

ko_site_logo-1.gifThis past weekend I was fortunate enough to preview Momofuku Ko's new 16-course lunch tasting menu. As reported elsewhere (here and here) David Chang and Co.'s East Village 12-seater will begin serving lunch Friday-Sunday after Labor Day. There's only one seating per service and the menu will run you $150 per person. My lunch ran well over three hours; I wouldn't be surprised if they end up cutting a few courses in the future. What follows are my recollections of each dish (in other words, I'm almost certain I got a few ingredients wrong here and there). Judging by the seasonality of the menu (lots of tomatoes, corn, baby veg, etc.), most of these dishes won't be around for long. The amuse as well as courses #2, #6, #8, #9, #13, and the pork and miso sausage in #11 were the most memorable, and with a few ingredient tweaks should be available well into fall and winter.
